The Marine Corps opened the biggest mess hall in the military at MCRD San Diego. It’s over 100,000 square feet and can put out 20,000 meals a day.
Recruits get 20 minutes to eat in it. Talking at the table is usually off limits.
The building
- It cost $84.2 million.
- It replaces the 64,000-square-foot hall the depot used for decades.
- Navy engineers say it beats the Fort Sam Houston and Fort Lee DFACs by more than 20,000 square feet.
- It has 840 light fixtures and 421,000 feet of electrical wire.
- It’s built to last 60 years.
The kitchen
- Walk-in ovens and 80-gallon kettles.
- A conveyor line cooked 2,200 pieces of catfish for lunch on day one.
- Summer is the rush. The depot can need upward of 6,200 meals for one feeding period.
- It’s set up to take overflow from Parris Island if something breaks over there.
The menu math
- Recruits burn 4,000 to 5,000 calories a day.
- Three meals give them about 3,700. The gap is on purpose.
- The food services director said “you want them to come out lean-looking.”
- Dropping 10 to 30 pounds in 13 weeks is normal.
- The old menu was “one entree, one starch, one vegetable.” Now it has oatmeal cups, beef and broccoli bowls, and nuts and seeds.
Last meal at the old one
- The old hall served its final meal Oct. 20.
- The new hall served its first meal Oct. 21.
- Bravo Company, 1st Recruit Training Battalion ate first.
For the bay
- The room grew by about 36,000 square feet and recruits get the same 20 minutes.
- The food services director says recruits “eat every morsel of chow that is offered to them.” Anybody who ate with a drill instructor watching believes him.
